I made these pork chops on a weeknight when I didn’t feel like standing in the kitchen arguing with myself about what to make. I had pork chops in the fridge and not a ton of motivation outside of that. The pantry provided brown sugar, soy sauce and a packet of onion soup mix. At first, that combo didn’t seem like anything special, but I’ve learned not to judge slow cooker meals too quickly.
So I went with that one. I laid the pork chops out in the slow cooker, side by side. I didn’t brown them. I didn’t question it. I just wanted dinner to be self-sufficient for once.
I combined the brown sugar, soy sauce and soup mix in a bowl. The sauce was simple, almost too simple, but it already smelled promising, sweet and salty and just a little sharp. I poured it over the pork chops and spread it around so everything was coated. I closed the lid and walked away.

A few hours later the smell started to drift through the house. Sweet caramel notes with savory onion and soy sauce. It brought people into the kitchen without being called. When I opened the lid, I could see that the pork chops were tender and covered in a thick, glossy sauce. The edges were softened, and the meat fell apart with a fork. I ladled the sauce over the top to serve. I didn’t want anything fancy on the side, rice or mashed potatoes were perfect.
At first, people ate quietly, then went back for more without saying much. Usually, that says it all for me. Now I have this recipe in my back pocket for days when I want something warm and simple and low effort but that tastes like I put time into it.
