For the Wontons:
1 pound ground chicken
2 green onions, minced
1 large egg, beaten
2 teaspoons hot sauce (optional, for a kick)
Ground black pepper, to taste
1 (16-ounce) package wonton wrappers
For the Soup:
2 (32-ounce) cartons chicken broth
1 (1-inch) piece fresh ginger, grated
5 green onions, sliced
1–2 teaspoons soy sauce, or to taste
Salt and white pepper, to taste
Instructions
In a bowl, mix together ground chicken, minced green onions, beaten egg, hot sauce, and black pepper until well combined. Chill the mixture for about 30 minutes for easier handling.
Place about 1 teaspoon of the chicken mixture in the center of each wonton wrapper. Moisten the edges with water, fold into a triangle, and pinch to seal. Bring the two outer points together and pinch again to form classic wonton shapes. Repeat until all are prepared.
In a large pot, bring the chicken broth to a boil. Add the grated ginger for fragrance.
Carefully drop in the wontons and cook until they float to the surface, about 5–6 minutes.
Season the broth with soy sauce, salt, and white pepper.
Ladle into bowls and garnish with sliced green onions before serving.
